- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1/4 to 1/2 cup ice water
- 3 medium apples, peeled and diced
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 egg, beaten for egg wash
- Powdered sugar, for dusting
Instructions
- In a bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles breadcrumbs.
- Add ice water, 1 tablespoon at a time, until dough comes together. Divide dough in half, wrap in plastic, and chill for at least 30 minutes.
- Preheat oven to 375°F (190°C). Roll out dough on a floured surface and cut into small circles.
- Mix diced apples, sugar, cinnamon, nutmeg, and lemon juice. Place a small spoonful of filling onto each dough circle.
- Fold dough over filling and seal edges by pinching or using a fork. Arrange mini pies on a baking sheet lined with parchment.
- Brush tops with beaten egg. Bake for 20-25 minutes until golden brown.
- Remove from oven, let cool slightly, and dust with powdered sugar before serving.
Notes
- You can use store-bought pie crust for faster assembly.
- Serve warm with a scoop of vanilla ice cream or whipped cream.
