Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat softened cream cheese until smooth. Add powdered sugar, sour cream, vanilla, and cinnamon; mix well.
- Add eggs one at a time, mixing after each addition. Pour filling over crust.
- Bake for 55-60 minutes until the edges are set and the center slightly jiggles.
- Cool completely at room temperature, then refrigerate for at least 4 hours before serving. Garnish with cinnamon before serving.
