  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt.
  3. Cream the butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually add the dry ingredients alternating with apple cider, beginning and ending with dry ingredients.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from pan. Serve topped with apple slices and caramel if desired.
