Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 shots of espresso or 2 tablespoons of strong brewed coffee
- 1/2 cup chocolate chips (optional)
Instructions
- In a large mixing bowl, mash the ripe bananas until smooth. Add the granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until well combined and creamy.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, gently folding to avoid overmixing. Pour in the brewed espresso and stir until just combined.
- Fold in the chocolate chips if using, ensuring even distribution of chocolaty goodness.
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray. Pour the batter into the prepared pan, spreading evenly. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm or at room temperature with your favorite beverage. For added indulgence, drizzle with melted chocolate or dust with powdered sugar.
Notes
- Use very ripe bananas for maximum sweetness and moisture.
- Adjust the amount of espresso for a stronger or milder coffee flavor.
- Experiment with adding nuts or coconut flakes for extra texture.
- For vegan adaptations, substitute eggs with flaxseed meal and use dairy-free chocolate chips.
