- 1 1/2 cups grated carrots
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and line a baking pan.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, combine oil and sugar. Add eggs one at a time, then vanilla.
- Gradually add dry ingredients to wet mixture, then fold in grated carrots.
- Pour batter into prepared pan and bake for 25-30 minutes. Allow to cool completely.
- For frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla until smooth.
- Spread frosting over cooled bars and decorate with sprinkles and additional grated carrots.

- Optional: Add chopped walnuts or raisins to the batter for extra texture.
