- 2 large eggs, beaten
- 1 ½ cups panko breadcrumbs
- ½ cup grated Parmesan cheese (optional)

- ½ teaspoon salt
- ½ teaspoon black pepper
- Cooking spray or olive oil spray
Instructions
- Cut the chicken into strips approximately 3 inches long and 1 inch wide. Pat dry with paper towels.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each chicken strip into the flour, then egg, then coat evenly with breadcrumb mixture. Place on a parchment-lined baking sheet.
- Preheat the oven to 400°F (200°C). Spray the coated chicken strips with oil or cooking spray.
- Bake for 20-25 minutes, flipping halfway through. For extra crunch, spray again with oil in the last 5 minutes.
