  • 4 large bell peppers (red, yellow, or orange)
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
  2. In a bowl, mix ricotta cheese, mozzarella, garlic, basil, parsley, salt, and pepper.
  3. Stuff each pepper with the cheese mixture and place in a baking dish.
  4. Drizzle the peppers with olive oil and bake for 25-30 minutes until peppers are tender and filling is golden.
