- 4 large bell peppers (red, yellow, or orange)
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
- In a bowl, mix ricotta cheese, mozzarella, garlic, basil, parsley, salt, and pepper.
- Stuff each pepper with the cheese mixture and place in a baking dish.
- Drizzle the peppers with olive oil and bake for 25-30 minutes until peppers are tender and filling is golden.
Notes
You can add chopped spinach or sun-dried tomatoes to the ricotta filling for extra flavor. Serve warm with a side salad for a complete meal.
