Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden.
- Add minced garlic and cook for 1 minute more.
- Pour in heavy cream, bring to a simmer, then stir in Parmesan cheese until melted and sauce thickens.
- Add cooked pasta and fresh spinach to the skillet, tossing until spinach wilts.
- Season with salt and pepper to taste. Serve hot garnished with extra Parmesan if desired.
