- 1 pound Italian sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook Italian sausage until browned. Remove and set aside.
- Sauté onion, garlic, carrots, and celery until tender.
- Add cooked sausage back to the pot, pour in chicken broth, and bring to a boil.
- Reduce heat and stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
- Simmer for 10 minutes to allow flavors to meld.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Notes
- You can substitute heavy cream with half-and-half for a lighter version.
- Make this soup vegetarian by replacing sausage with plant-based sausage options.
