  • 1 pound Italian sausage, crumbled
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned. Remove sausage and set aside.
  2. In the same pot, add chopped onion and garlic; sauté until translucent.
  3. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add cooked sausage back into the pot along with gnocchi. Cook until gnocchi float to the top, about 3-4 minutes.
