- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn kernels
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 cup heavy cream
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until softened.
- Stir in kidney beans, corn, diced tomatoes, beef broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream and cook for another 5 minutes until heated through.
- Serve hot, garnished with fresh herbs if desired.
Notes
- You can substitute ground beef with ground turkey or chicken for a lighter version.
- Add chopped jalapeños for extra spice.
