- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; cook until fragrant and translucent.
- Add ground beef, cumin, chili powder, salt, and pepper; cook until browned. Drain excess fat if necessary.
- Stir in half of the enchilada sauce and cook for another 2 minutes.
- Spread a thin layer of remaining enchilada sauce in a baking dish.
- Place a tortilla, spoon some beef mixture, and sprinkle cheese. Repeat layers.
- Top with remaining sauce and cheese.
- Bake in the oven for 20-25 minutes until cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to add chopped jalapenos or corn for extra flavor.
- For a spicier kick, increase the chili powder or add hot sauce.
- Use corn tortillas for a gluten-free option.
