- 12 oz (340 g) of your favorite sausage links or slices
- 8 oz (225 g) of fettuccine or linguine
- 1 cup (240 ml) of heavy cream
- 1 can (14 oz) of diced tomatoes with green chilies
- 1 tablespoon Cajun seasoning
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- Chopped green onions and parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned, about 5 minutes.
- Add minced garlic and sliced bell peppers; sauté for 2 minutes.
- Stir in Cajun seasoning and canned diced tomatoes with green chilies; cook for 2 minutes.
- Add the uncooked pasta and pour in the heavy cream. Bring to a boil, then reduce heat and simmer until pasta is cooked and sauce thickens, about 12 minutes.
- Garnish with chopped green onions and parsley before serving.

- Adjust seasonings to taste. Serve hot with crusty bread or a side salad.
