- 1 lb butternut squash, peeled and cubed
- 1 1/2 cups all-purpose flour
- 1 large egg
- Salt and pepper to taste
- 1 lb sausage links, sliced
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- Fresh sage or parsley for garnish
Instructions
- Preheat oven to 400°F. Roast butternut squash on a baking sheet until tender, about 25 minutes. Mash and let cool.
- In a mixing bowl, combine mashed butternut squash, flour, egg, salt, and pepper to form a dough.
- Divide the dough into portions and roll into long ropes. Cut into 1-inch pieces to create gnocchi.
- Cook gnocchi in boiling salted water until they float, about 2-3 minutes. Transfer to a skillet with olive oil.
- In a separate pan, cook sausage slices until browned. Add to the gnocchi with some sauce from the skillet.
- Serve hot, sprinkled with Parmesan and herbs.
Notes
- Ensure squash is well mashed to avoid lumps in the dough.
- Do not overcrowd the skillet when cooking sausage to maintain crispiness.
- Adjust seasoning as needed and add red pepper flakes for a spicy touch.
