- 4 slices of bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups whole milk or heavy cream
- 1 package (16 oz) gnocchi
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- Chopped chives or green onions for garnish
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Add chicken broth and bring to a simmer.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat and slowly mix in milk or heavy cream.
- Add shredded cheddar cheese and stir until melted and smooth.
- Season with salt and pepper to taste.
- Top with cooked bacon and chopped chives before serving.
Notes
- Feel free to add additional vegetables like spinach or peas for extra nutrition.
- Use thick-cut bacon for more flavor and crunch.
- Adjust the cheese amount for a more or less cheesy flavor.
