Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 package (9 oz) cheese tortellini
  • 1 cup spinach, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned, about 5-7 minutes.
  3. Remove sausage and set aside. In the same pot, sauté onion, garlic, carrots, and celery until tender.
  4. Return sausage to the pot, add chicken broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and add tortellini; cook until tender about 3-4 minutes.
  6. Stir in spinach and cook for another minute. Serve hot garnished with fresh herbs if desired.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • You can substitute turkey sausage for a lighter option.
