- 1 tablespoon olive oil
- 1 pound Italian sausage
- 1 onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 1 package (9 oz) cheese tortellini
- 1 cup spinach, chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned, about 5-7 minutes.
- Remove sausage and set aside. In the same pot, sauté onion, garlic, carrots, and celery until tender.
- Return sausage to the pot, add chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and add tortellini; cook until tender about 3-4 minutes.
- Stir in spinach and cook for another minute. Serve hot garnished with fresh herbs if desired.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- You can substitute turkey sausage for a lighter option.
