- 1 lb Italian sausage
- 1 package tortellini (fresh or frozen)
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onions, carrots, and celery until tender.
- Add garlic, thyme, basil, salt, and pepper; cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add tortellini and cooked sausage; cook according to package instructions.
- Serve hot, garnished with fresh parsley.

- You can substitute sausage with ground turkey or chicken for a lighter option.
- For extra flavor, add a splash of white wine during sautéing.
