  • 1 lb (450g) potato gnocchi
  • 1 lb (450g) boneless, skinless chicken breasts, diced
  • 6 slices of bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by heating a large skillet over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside on paper towels.
  2. In the same skillet, add the diced chicken breasts seasoned with salt, pepper, and Italian seasoning. Cook until golden and cooked through, about 6-8 minutes. Remove and set aside.
  3. Add olive oil if needed. Sauté minced garlic until fragrant, about 30 seconds. Add gnocchi and cook until golden and crispy, approximately 5 minutes.
  4. Return cooked chicken and bacon to the skillet. Stir in ranch dressing and shredded cheddar cheese. Cook for 2-3 minutes until cheese melts and mixture is heated through.
