- 1 lb (450g) potato gnocchi
- 1 lb (450g) boneless, skinless chicken breasts, diced
- 6 slices of bacon, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start by heating a large skillet over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside on paper towels.
- In the same skillet, add the diced chicken breasts seasoned with salt, pepper, and Italian seasoning. Cook until golden and cooked through, about 6-8 minutes. Remove and set aside.
- Add olive oil if needed. Sauté minced garlic until fragrant, about 30 seconds. Add gnocchi and cook until golden and crispy, approximately 5 minutes.
- Return cooked chicken and bacon to the skillet. Stir in ranch dressing and shredded cheddar cheese. Cook for 2-3 minutes until cheese melts and mixture is heated through.
