- 1 lb smoked sausage, sliced
- 4 large potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup chopped green onions
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: cooked bacon bits or diced peppers for extra flavor
Instructions
- Preheat oven to 375°F (190°C). Toss cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet alongside sliced smoked sausage.
- Bake for 25-30 minutes, stirring halfway, until potatoes are tender and golden brown.
- In a large bowl, mix cooked potatoes and sausage with ranch dressing until evenly coated.
- Transfer mixture into a 9×13-inch baking dish. Sprinkle shredded cheddar cheese over the top.
- Bake for another 10-15 minutes until cheese is melted and bubbly.
Notes
- You can substitute chicken or turkey sausage if desired.
- For extra spice, add diced jalapeños or hot sauce.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or oven.
- To make ahead, assemble the dish, refrigerate, and bake when ready to serve.
