- 4 large potatoes, diced
- 1 lb smoked sausage, sliced
- 1 packet ranch seasoning mix
- 2 cups shredded cheddar cheese
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil and ranch seasoning mix until evenly coated.
- Spread potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes until crispy and golden.
- While potatoes roast, cook smoked sausage slices in a skillet over medium heat until browned and heated through.
- Remove potatoes from oven, sprinkle with shredded cheese, and return to oven for another 5 minutes until cheese melts.
- Serve the cheesy potatoes topped with sausage slices and garnished with fresh parsley.
Notes
- For extra flavor, add a dash of paprika or garlic powder to the potatoes before roasting.
- You can substitute cheddar cheese with Monterey Jack or mozzarella.
