Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

- Beat eggs in a separate bowl, then add to potato mixture and mix well.
- Form mixture into small bite-sized balls and roll in bread crumbs.
- Arrange on prepared baking sheet, brush with olive oil.
- Bake for 20-25 minutes until golden brown and crispy.
