- 4 large russet potatoes, sliced
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 cup shredded Gruyere or Swiss cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon thyme leaves
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a skillet, melt butter with olive oil over medium heat. Add onions, thyme, salt, and pepper. Cook slowly, stirring occasionally, until caramelized, about 20 minutes.
- Meanwhile, layer sliced potatoes in the prepared dish, seasoning each layer with salt and pepper.
- Spread caramelized onions over the layered potatoes.
- Top with shredded cheese and Parmesan cheese evenly distributed.
- Bake uncovered for 40-45 minutes until golden and bubbly.
Notes
- For extra flavor, add a touch of balsamic vinegar while caramelizing onions.
- Can be prepared a day ahead and baked just before serving.
