Ingredients
- Fresh burrata cheese – 1 ball (about 8 oz.)
- Fresh ripe tomatoes – 4 medium-sized, diced
- Bakery-quality baguette or Italian bread – 1 loaf, sliced
- Extra virgin olive oil – 2-3 tablespoons
- Garlic cloves – 2, halved
- Fresh basil leaves – a handful, chopped
- Salt and freshly ground black pepper – to taste
- Balsamic glaze (optional) – for drizzling
Instructions
- Preheat your oven to 375°F (190°C). Arrange the sliced bread on a baking sheet. Brush each slice generously with extra virgin olive oil. Toast in the oven for about 8-10 minutes until golden and crispy.
- In a bowl, combine the diced ripe tomatoes with chopped fresh basil, a pinch of salt, black pepper, and a drizzle of olive oil. Let it sit for at least 10 minutes to allow flavors to meld.
- Once the bread is toasted, lightly rub each slice with a cut garlic clove for added flavor. Spoon the tomato mixture generously on each toast. Carefully tear the burrata cheese into small pieces and place on top of the tomatoes. Finish with a drizzle of balsamic glaze if desired for a sweet, tangy finish.
Notes
- Use freshly baked bread for maximum crunch and flavor.
- Allow the tomato mixture to sit for at least 10 minutes to enhance the flavors.
- Reheat bread slices briefly if preparing in advance to maintain crunch.
- optional: add extra toppings such as roasted red peppers or arugula for variety.
