  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh blueberries
  • 8 oz cream cheese, softened

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate large bowl, mix melted butter, eggs, vanilla, and buttermilk until combined.
  4. Gradually add dry ingredients to wet ingredients, mixing gently.
  5. Fold in blueberries carefully to prevent bursting.
  6. In a small bowl, beat cream cheese until smooth.
  7. Pour half of the batter into the pan, spread cream cheese evenly, then top with remaining batter.
  8. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  9. Allow to cool before slicing and serving.

Notes

  • Use fresh blueberries for best flavor. Frozen can be used but do not thaw to prevent color bleeding.
  • For a crustier top, bake at 375°F for the last 10 minutes.
