Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a boil, then remove from heat.
- Add flour in one go and stir vigorously until the mixture pulls away from the sides of the pan. Let it cool slightly.
- Transfer the cooled batter to a mixing bowl. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until smooth.
- Fill a piping bag fitted with a star tip with the batter. Pipe small 1-2 inch lengths onto the prepared baking sheet, with space between each.
- Bake for 15-20 minutes or until golden brown and crispy around the edges.
- While warm, toss the churro bites in the cinnamon sugar mixture until evenly coated. Serve immediately with melted chocolate or caramel if desired.
