  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy. Beat in egg, then stir in apple cider and vanilla.
  4. Gradually add dry ingredients to wet until combined.
  5. Scoop spoonfuls onto prepared baking sheets and bake for 12-15 minutes. Cool completely.
  6. Prepare filling by beating butter, powdered sugar, and vanilla until smooth.
  7. Spread filling onto the bottom of one cookie and top with another to form a sandwich.
