Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Beat in egg, then stir in apple cider and vanilla.
- Gradually add dry ingredients to wet until combined.
- Scoop spoonfuls onto prepared baking sheets and bake for 12-15 minutes. Cool completely.
- Prepare filling by beating butter, powdered sugar, and vanilla until smooth.
- Spread filling onto the bottom of one cookie and top with another to form a sandwich.
- Optional: drizzle with caramel sauce before serving.
