Ingredients
Scale
- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
For the Crumb Topping
- 1/2 cup all-purpose flour
- 1/3 cup packed light brown sugar
- 1/4 cup unsalted butter, cold
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your baking pan.
- Mash the ripe bananas in a large bowl until smooth. Add the eggs, vanilla extract, and buttermilk, mixing well.
- Whisk together the flour, baking soda, salt, and sugar in a separate bowl. Gradually combine with the wet ingredients, stirring until just mixed.
- Prepare the crumb topping by mixing flour, brown sugar, and cinnamon, then cutting in the cold butter until coarse crumbs form.
- Pour the banana batter into the prepared pan, then sprinkle the crumb topping evenly over the batter.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before serving.
Notes
- Ensure bananas are ripe for the best flavor and moisture.
- Adjust baking time slightly depending on your oven.
- For a richer flavor, add chopped nuts or chocolate chips to the batter or crumb topping.
