- 1 pound ground beef or turkey
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated cheddar or American cheese
- 4 slices crispy bacon, chopped
- 1 cup bourbon BBQ sauce
- 4 sub sandwich rolls
- 1 cup shredded lettuce (optional)
- 1 tomato, sliced (optional)
- Pickles for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Combine ground meat, breadcrumbs, beaten egg, and cheese in a large bowl. Mix thoroughly and form into 1-inch meatballs.
- Place meatballs on a parchment-lined baking sheet and bake for 10-12 minutes until browned and cooked through.
- Meanwhile, cook chopped bacon in a skillet until crispy. Drain and set aside.
- In a skillet, simmer cooked meatballs in bourbon BBQ sauce for 5 minutes, turning gently to coat. Add bacon pieces during the last minute.
- Slice the sub rolls lengthwise, fill with meatballs and sauce, then top with shredded cheese, lettuce, tomato, and pickles as desired.
- Place filled subs on a baking sheet and toast at 375°F (190°C) for about 5 minutes until cheese melts and buns are toasted. Serve hot.

- For extra flavor, layer additional toppings like onions or pickles.
- Use high-quality bacon for best results.
- Can be assembled ahead and refrigerated, reheat wrapped in foil at 350°F (175°C) for 10 minutes.
