  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated cheddar or American cheese
  • 4 slices crispy bacon, chopped
  • 1 cup bourbon BBQ sauce
  • 4 sub sandwich rolls
  • 1 cup shredded lettuce (optional)
  • 1 tomato, sliced (optional)
  • Pickles for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Combine ground meat, breadcrumbs, beaten egg, and cheese in a large bowl. Mix thoroughly and form into 1-inch meatballs.
  2. Place meatballs on a parchment-lined baking sheet and bake for 10-12 minutes until browned and cooked through.
  3. Meanwhile, cook chopped bacon in a skillet until crispy. Drain and set aside.
  4. In a skillet, simmer cooked meatballs in bourbon BBQ sauce for 5 minutes, turning gently to coat. Add bacon pieces during the last minute.
  5. Slice the sub rolls lengthwise, fill with meatballs and sauce, then top with shredded cheese, lettuce, tomato, and pickles as desired.
  6. Place filled subs on a baking sheet and toast at 375°F (190°C) for about 5 minutes until cheese melts and buns are toasted. Serve hot.
